Reverts #37600, & address CI Pipeline issue.
UITest related projects should be excluded from verifyDepsJsonLibraryVersions.ps1 step.
In previous matching pattern, the UITestAutomation won't be excluded which is incorrect.
So, not only bring back HostModule UITests, but also fix the matching pattern to exclude all UITest projects and UITestAutomation project.
